(We’re doing 50 Days & 50 Ways to have a merry recycled holiday. More about this….)
There’s no one luckier than the guest at Thanksgiving dinner.
No wrestling with a giant frozen fowl. No worries over whether you have the right serving dishes. (Although that’s easily solved by a quick visit to your local home decor consignment shop or NFP thrift shop!) No having to keep the kids from messing with your clean guest bath.
The request “Why don’t you just bring a nibble, dear?” used to be satisfied, when I was in college, with a grocery chain tray of raw carrots and celery. Now that I am grown-up, though, more is expected of me.
It’s got to be something easy to make. Easy to transport (it’s a family joke, the year I slammed on the brakes and 3 dozen deviled eggs ended up upside down on the floor mat.) Pretty to present. Easy for guests to nibble, and most of all, easy on the budget.
Oh, and it has to go with turkey. Enter
Mini Caramelized Onion, Spinach and Potato Quiches
Don’t they sound yummy? Here’s the recipe. I’d go these in a mini-muffin pan. You don’t want to ruin the guests’ appetites.
